Kangaroo Island Distillery produces a regular line of 5 gins, 2 vodkas and 5 liqueuers with a stream of bespoke, limited edition or seasonal products constantly in a state of creation. Operating on a small rural property the Cellar door is a popular place to visit, experience gin and KI hospitality. KI Spirits is a favoured brand and identity in many leading bars, independant bottleshops and hospitality business in South Australia and beyond. Always mindful of humble beginnings KI Spirits is actively involved in many charity and sponsorship events, taking opportunity to share knowledge of craft spirit.
The Origins of KIS
The KIS story began in 2002, when Jon and Sarah Lark married and set out to establish Australia’s first dedicated gin distillery, where they wanted to do things properly, the traditional way. Over 70 national and international awards since KIS began is testament to Jon and Sarahs passion, skill, persistence and dedication to quality craft spirit, traditionally made with an Australian twist.
Jon and Sarah believe that gin should still be predominantly juniper flavoured - it’s a choice (some of the new ones aren’t). But from there on, there's a lot of flexibility and you can almost do or add anything you like. And this is where Jon and Sarah have worked their magic to produce the exquisite uniqueness of KIS gins, which underpins Kangaroo Island Spirits' core values and product personality. Consistency and balance are core KIS values.
For Jon and Sarah, it is not about the size of the business; it is about achieving the best reputation,and creating something craft and beautiful. The KIS team is in it for the character of the KIS lifestyle, the passion for inclusion (which includes sharing ideas) and being creative with botanicals. This hands-on, family approach is what being a "Craft Distillery" means to the KIS team – this is the KIS model.
Why Kangaroo Island?
Jon and Sarah Lark selected Kangaroo Island for a couple of reasons. Sarah describes it as follows: “It’s a beautiful location. It costs a little bit more to get there, but when you are on the Island it feels as if you have turned everything off and you can slow down – that is, of course, until you need to get up at six and turn the still on every morning. We had been living in the desert for a number of years, so a sea change was definitely high on our priority list.”

When you step through the door of Kangaroo Island Spirits, you step into the heart and soul of our boutique distillery. You will have had a good view of “Mary”, our Australian made pot still. Then the aromas from the production area flow through to the tasting room, and you know you are stepping into a genuine distillery.
We encourage our products to speak for themselves by offering visitors a taste, and our experienced staff are delighted to talk about our products and how best to enjoy them. Our tranquil Gin Garden is a lovely place to enjoy a G&T, signature affogato or the perfect coffee.
The cellar door at Cygnet River is open to visitors for tasting, bottle sales and light refreshments on the following days:
